This delicious creamy mushroom filled stroganoff is very similar to a beef stroganoff. One of the key reasons this will taste like a beef stroganoff is because mushrooms have a savory flavor, associated with meats, called umami. When looking to replace beef or any meat in a meal I would highly recommend trying mushrooms, this umami flavor is considered the fifth flavor and is known for its similar taste to meat. Mushrooms are also a very high and natural source for Potassium. By increasing your mushroom intake you will notice a decrease in symptoms of obesity, diabetes, and heart diseases, It also reduces your risk for cancer as it is high in Anti-oxidants, Selenium, and Vitamin D. For this meal you will need the following ingredients...
Ingredients
- 3 cups of uncooked elbow macaroni or small shells
- 4-5T of lentils
- 2T of Nutritional yeast.
- A dash of salt and pepper
- 1t of cumin
- 1t of ground mustard
- 1t of turmeric (for color)
- 4 cloves of garlic
- 2T of olive oil
- 1T of coconut aminos (or soy sauce)
- 1t of dijon mustard
- 8 oz. of vegan cream cheese (I used this brand.)
- 1 1/2 cups of vegetable broth
- 1/2 cup of sweet yellow onion
- 1-2 cups of sliced mushrooms
Directions
- For this meal you will want to start will want to start with cooking the pasta and lentils. For the sake of stove top space and dishwashing I cooked both the lentils and pasta together. Just make sure the lentils can cook at the same amount of time as your pasta and you will be all set.
- While your pasta and lentils are cooking grab a large skillet and cook onions and sliced mushrooms together nicely sauteing them in the olive oil. Once the onions are a nice light brown color and the mushrooms have softened and darkened, add garlic, cream cheese, and vegetable broth and whisk together. After whisking together add all the spices and whisk until blended together.
- Once the sauce is thick add the strained lentils and pasta to the sauce and let it simmer till it is think enoughfor your liking. Feel free to top with any vegan or dairy free cheese of choice. Enjoy!
