According to history, popsicles are a fairly new and innovative way of keeping cool during the hot summer days. In the early 1900's Frank Epperson, an eleven-year-old boy accidentally left a powered soda mix outside with a wooden stirring stick. Early the next morning he went out to discover he had created a delicious frozen treat. The next day Frank began selling them to his friends and family. It soon became a well-loved summertime staple. Today there is currently two billion popsicles sold in stores each year, not including all the popsicles made at home. Popsicles have tremendously expanded in flavor over the past century as well. We are no longer limited to the flavor of lemonade or kool-aid but have advanced to creative flavors such as blackberry mint and coconut matcha or pineapple dark cherry. Today I will be showing you six unique flavored popsicles which I am sure you will come to love.
Pineapple Orange Creme
Each popsicle recipe yields four standard popsicles
- 3 Tblsp of natural orange juice concentrate
- 1/2 cup of sweetened coconut milk
- 1/4 cup of frozen pineapple pieces
Blueberry Pineapple Chia Seed
- 1/4 cup of blueberriesu
- 1/2 cup of pineapple juice
- 1/4 cup of frozen pineapple pieces
- 3 Tblsp of chia seeds
Recipe: Blueberries and Pineapple are a perfect combination for a refreshing treat on any hot day of the year! To start the popsicle you will need to blend the blueberries, chia seeds, and 1/4 cup of pineapple juice. This will be the first half of your popsicle. For the second half all you will need is the frozen pineapple and remaining pineapple juice. After blending you can top the rest of your popsicle container of with this a freeze.
Chocolate Peanut Butter Banana
- 1 cup of frozen banana pieces
- 3 Tblsp of cocoa powder
- 3 Tblsp of peanut butter
- 1/2 cup coconut milk
- 3 tsp of chia seeds (optional)
Pineapple Cherry Bomb
- 3 Tblsp of Pom cherry juice
- 1/4 cup of frozen cherries
- 1/4 cup of frozen pineapple pieces
- 1/4 cup of coconut milk
Recipe: The Pineapple Cherry Bomb is one of my personal favorite flavors as it is tart, but sweet. For this popsicle, in particular, it is important to stack the flavors and let them freeze in sections otherwise the colors mix into an unappetizing brown color. The top layer of the popsicle is the tart cherry flavor for this you will need to blend the cherries with the Pom cherry juice. Next, in a separate container, you can then blend the frozen pineapple and coconut milk. If the mixtures are a thick enough consistency you should be able to add them on top of each other without them mixing. With the popsicle mixture already being partially frozen the freezing time should be speedy!
Cherry Limeade
- 3 Tblsp of Pom cherry juice
- 1/4 cup of frozen cherries
- 3 Tblsp of lime juice
- 1 Tblsp of agave nectar
- 4 Tblsp of warm water
Recipe: Again for the cherry limeade I would recommend stacking the flavors as the red and green don't create a pretty color when mixed. For the first half it is blended just like the cherry part in the "Pineapple Cherry Bomb" popsicle. You will just need to blend the Pom cherry juice with the frozen dark sweet cherries. After the first half is frozen for the most part you can make your homemade limeade. For starters the water will need to be lukewarm-warm, this will help mix the agave nectar in, which you will need to balance the bitterness of the lime juice. After the agave nectar has been mixed in you can add the lime juice. For additional color, you can add a few drops of green food coloring OR a few tsp of vibrant lime zest. After your limeade mixture has cooled off a bit you can pour it over your frozen cherry mixture. All that is left is to freeze it and wait!
Coconut Matcha with a Blackberry Mint
- 1/2 a cup of frozen blackberries
- 1 cup of sweetened coconut milk
- 1 sprig of mint leaves
- 3 tsp of matcha powder
- 1 Tblsp of agave nectar
Recipe: I know what you guys are thinking. "Matcha with mint and blackberries? That is way too many flavors!" On the contrary, however, the tartness of the blackberry mint keeps you from being overwhelmed by the creamy, sweetness of the matcha tea. To start the first half of the popsicle you will need to blend the blackberries with 1/4 cup of coconut milk and the sprig of mint. After filling the containers half way up you can set them in the freezer to create a barrier between the blackberry color and dark green matcha color. For the matcha concoction, you can blend the matcha powder into the remaining coconut milk with the agave using aa powered whisk, making sure to fully blend the matcha powder into the coconut milk. After making the final part you can then add it to the top of the container and freeze again!
