Garlic "Parmesan" Roasted Veggies

If you think about it, you can roast pretty much anything these days. People for many centuries have gone from roasting chickens and other game over spitfire to modern day people roasting exotic fruits and veggies over a grill or dry roasting them in an oven. Today I will be showing you a unique way to roast and flavor your veggies.

Ingredients:

  • 7-8 mini sweet bell peppers
  • 5-6 Red potatoes
  • 2 full Yellow onions
  • 4-6 garlic cloves
  • 2-3 Tablespoons of Nutritional Yeast
  • Salt and Pepper

  1.  To start this dish you will need a grill griddle that can be used inside an oven. Preheat your oven to 350F The first part of this process will be to wash all the red potatoes and then cut them into thick wedges.
  2. Take the wedges and lightly toss them in either olive oil, avocado oil, or coconut oil. Then sprinkle them with Salt and Pepper. Next, line the potatoes on the grill, so that the inside will have grill marks. Now cook the potatoes first for twenty minutes.
  3. While the potatoes are roastings cut the onions into chunks as well as the sweet peppers. Next lightly toss these into your choice of oil and season them with salt and pepper.
  4. After the potatoes have finished the first twenty minutes you can toss the peppers and onions onto the griddle. Next finely slice the garlic and sprinkle over the peppers and onions. Cook for another 15-20 minutes with the potatoes.
  5. After they have finished roasting you will notice that they are softer in texture and will have a sweeter taste. The final step is to sprinkle the nutritional yeast on them.

Mac and Cheese Mushroom Stroganoff

This delicious creamy mushroom filled stroganoff is very similar to a beef stroganoff. One of the key reasons this will taste like a beef stroganoff is because mushrooms have a savory flavor, associated with meats, called umami. When looking to replace beef or any meat in a meal I would highly recommend trying mushrooms, this umami flavor is considered the fifth flavor and is known for its similar taste to meat. Mushrooms are also a very high and natural source for Potassium. By increasing your mushroom intake you will notice a decrease in symptoms of obesity, diabetes, and heart diseases, It also reduces your risk for cancer as it is high in Anti-oxidants, Selenium, and Vitamin D. For this meal you will need the following ingredients... Ingredients  3 cups of uncooked elbow macaroni or small shells 4-5T of lentils  2T of  Nutritional   yeast.  A dash of salt and pepper 1t of cumin  1t of ground mustard 1t of turmeric (for color)  4 cloves of garlic  2T of olive oil  1T

The Best Acai Bowl Ever

If working in a smoothie and juice shop has taught me one thing it's how to make Acai Bowls. My favorite thing about this is when someone walks up to me to order one because they never know how to pronounce Acai. Now the hardest thing when making an Acai bowl is knowing what to top the bowl with. Luckily for you, I have a never-ending list of toppings and how to pair them. Personally, I like to arrange my acai bowl toppings in a pretty arrangement because honestly doesn't everything taste better when it is pretty. Now the key thing to a perfect acai smoothie base is consistency. Let the smoothie making commence! Acai Bowl Smoothie Base 2 oz of almond or coconut milk (I prefer almond.) 2 16 oz. packets of organic pureed acai berries (I use Sambazon brand ) 2 one inch pieces of frozen organic banana 1/4 cup of frozen organic blueberries (optional) plant based protein powder (optional) Directions 1.
