Pan Fried Corn

To kick-off fall I've decided to take a classic American dish and give it a little twist! Normally when you think of corn on the cobb you think of steamed corn with butter, salt, and pepper, but today we are gonna spice it up a bit! We are gonna be making pan-fried BBQ corn on the cobb. Don't worry, it is vegan-friendly so you can enjoy the sweet taste of BBQ!

Ingredients

  1. To start the cooking process you will need to remove any husks and silk pieces on the corn. While doing this bring an inch of water in a skillet to a boil.
  2. Once the water is boiling add the corn into it and boil for three minutes with the skillet covered.
  3. After the corn has been steamed, remove the water and add two tablespoons of coconut oil to the skillet and melt on medium heat.
  4. While the oil is cooking take the corn and rub the BBQ seasoning into the corn. If you don't have a BBQ seasoning, season salt or ranch flavored seasoning will work.
  5. Next, take the seasoned corn and place it in the hot oil. Cook on each side until well browned and drain the oil off.
  6. The next best step is to enjoy!

Mac and Cheese Mushroom Stroganoff

This delicious creamy mushroom filled stroganoff is very similar to a beef stroganoff. One of the key reasons this will taste like a beef stroganoff is because mushrooms have a savory flavor, associated with meats, called umami. When looking to replace beef or any meat in a meal I would highly recommend trying mushrooms, this umami flavor is considered the fifth flavor and is known for its similar taste to meat. Mushrooms are also a very high and natural source for Potassium. By increasing your mushroom intake you will notice a decrease in symptoms of obesity, diabetes, and heart diseases, It also reduces your risk for cancer as it is high in Anti-oxidants, Selenium, and Vitamin D. For this meal you will need the following ingredients... Ingredients  3 cups of uncooked elbow macaroni or small shells 4-5T of lentils  2T of  Nutritional   yeast.  A dash of salt and pepper 1t of cumin  1t of ground mustard 1t of turmeric (for color)  4 cloves of garlic  2T of olive oil  1T

The Best Acai Bowl Ever

If working in a smoothie and juice shop has taught me one thing it's how to make Acai Bowls. My favorite thing about this is when someone walks up to me to order one because they never know how to pronounce Acai. Now the hardest thing when making an Acai bowl is knowing what to top the bowl with. Luckily for you, I have a never-ending list of toppings and how to pair them. Personally, I like to arrange my acai bowl toppings in a pretty arrangement because honestly doesn't everything taste better when it is pretty. Now the key thing to a perfect acai smoothie base is consistency. Let the smoothie making commence! Acai Bowl Smoothie Base 2 oz of almond or coconut milk (I prefer almond.) 2 16 oz. packets of organic pureed acai berries (I use Sambazon brand ) 2 one inch pieces of frozen organic banana 1/4 cup of frozen organic blueberries (optional) plant based protein powder (optional) Directions 1.
